Do NOT put charcoal in your gas grill.

You can buy little boxes with wood chips for doing just that.

I don’t have the slightest idea how to use my smoker. Although I read the directions frontwards and backwards, I still need guidance. The best way is to hang it so that the smoke can circulate freely around the bird. Add wood chips only for the first two hours, because I understand that that is all the time the smoke will penetrate the meat; after that you will just be wasting wood. Maintain the heat (at 200- to 225-degrees F.) for three or four hours beyond that, until the meat reaches an internal temperature of 165-degrees F. in the middle of the thickest part of the thigh. An external thermometer with an attached temperature probe is the ideal tool for this, so you don’t have to keep opening the smoker to check the temperature.

if you have a gas grill but what that authentic grill flavor, add some wood chips. My personal favorite is mesquite, but I have heard that apple wood is good too. All you do is soak the chips for 30 min in water and through them on the grill to get a nice smokey flavor. I know this doesn’t really answer your question, it gives you an alternative. I prefer mesquite charcoal myself.
