Aside from the cleanup, does it hurt the grill or cause a dangerous condition?

I don’t know, but it would easier to either put a small pan with wood chips in water on the grill for added flavor. Or simply apply Liquid Smoke to the food. Chow

    only have a gas grill, can i place lump charcoal on the grill ? OR place lump charcoal in one of those cheap bread pans and place it on the grill to give a woody smoke flavor to my chicken which will be placed on the rack??

    No I wouldn’t put charcoal on your gas grill. What you could do however is use a cast iron wood chip holder (they come in a variety of styles and sizes and are pretty inexpensive) and put wood chips in for added smoke flavor. Be sure to soak your chips in water prior to putting them in the fire.

    A little more info from my website…….

    Wood Chips… All of us like the added flavor the different woods provide. In Texas we seem to use what is plentiful and that would be oak, mesquite, pecan and maple. Let’s not forget that apple, cherry, alder, hickory and even sassafras can be had or purchased at some of your specialty stores and they provide uncommonly good flavor and aroma.

    Always thoroughly soak you chips in water prior to adding to the fire or chip container (unless you are adding to an already lit smoker).

    Here’s some good BBQ tips for you. Oak works well with beef, mesquite works well with almost anything, pecan is great with poultry, maple with pork or poultry, apple works well with pork or poultry and maybe try the cherry with you next venison dish. Add your chips early as the meat tends to soak up more flavor in the beginning. The colder the meat, the more flavor it will absorb.

      Question by Mike: When grilling outside, do you prefer Charcoal or Propane grills?
      I prefer charcoal myself, because of the added flavor it gives everything you grill. Propane grilled foods taste the same as if it was cooked on the kitchen stove in my opinion.
